We use Teaching Assistants a lot, and we would like to be able to import them to classes with a simple CSV.

Exactly the same as currently exists for Teachers. This seems like a relatively quick fix which would make a lot of difference to us.

Either provide a dedicated tab in the import or expand the current teacher import to include Teaching assitants.
